Sourdough Loaf with Raisin and Dates

Punyalah lama tidak menulis, tiba-tiba naik resepi roti menggunakan yis liar (sourdough). As it name implies, ia tidaklah masam sebenarnya, melainkan jika kita peram lebih lama.

Disebabkan saya membuat secara manual, dan tidaklah begitu beriya untuk menguli, saya menggunakan teknik slow proofing, campak sahaja ke dalam peti ais selama 24 jam, biar sahaja proses pemeraman yang lama itu melembutkan roti saya.

Doh ini memang sangat lembik, tapi tidaklah sampai jadi batter cucur tu. Nak bentukkan memang jenuh, tetapi masih boleh dibentuk. Hidrasi adalah sangat tinggi.

Disebabkan saya masih ingat bagaimana roti saya yang sebelum ini lembut selepas dibakar (dan tidak menulis resepinya haha), maka saya layankan sahaja.

Slow proofing really do wonders.

Now, the recipe please.

Sourdough Loaf with Raisin and Dates

Levain
1 tbs sourdough starter
3 tbs unbleached high protein flour
water just to combine
(let it sit for 3 hours ++, tapi saya buat 3 jam sahaja)

Ingredients
2 cups unbleached high protein flour
1 cup unbleached high protein flour (organic)
1 cup unbleached plain flour
1 tbs palm sugar (gula kabung)
1 tbs raw cane sugar
1 tbs honey
2 tbs butter
2-3 cups water
Raisins and dates

Method
1. Mixed all dry and wet ingredients except for butter. To add water to the mixture, add bit by bit until it form a dough. And yes, I am manually mixing the dough.

2. Dough should be little bit sticky,then add butter bit by bit, until it is no longer stick to your hand. If you want to omit butter, replace it with any oil you want, but the same process.

3. Let it rest in the fridge, 24 hours.

4. After 24 hours, take the dough out and divide it into two portion. Flatten the dough and sprinkle as many raisins and dates as you like. Do pullman method to shape the dough.

*Yes. The dough is quite hard to work with haha, but you can add flour as you roll and fold.

5. Put the shaped dough in loaf tin, let it rest for 4-6 hours or until it double the size. (I finished at 11.30 pm, go to sleep, started to bake at 6 am)

6. Heat oven at 180C (depend on your oven ya) for 10 minutes, then after you lower the temperature to 150C, put your loaf tin in the oven. Spray some water in the oven and on top of the dough. Bake with that temperature for 10 minutes (api atas bawah). Then lower it to 125C for another 10 minutes (api bawah)

*this is just method that I use, you can just bake it for 20 minutes regarding to your oven. Oven semua tak sama kan.

7. Once its done, take it out, let it cool at cooling rack, lather honey (or butter or oil) on top of your loaf.

*ye, saya guna pelbagai tepung, sebab saya run out of tepung dan very kedekut haha. You can use all unbleached high protein flour organic or non organic if you like. Sebab itulah saya selalu cakap, saya main campak-campak sahaja.

*Be careful with liquids (water and such). Kalau levain a bit runny, kurangkan air. Tak nak buat levain pun tidak mengapa, feed je starter dan boleh terus guna, sukatan, 2 sudu besar starter : 1 cawan tepung.

*Pemanis pun sama, saya ni je yang suka campur-campur itu ini.

*Nak tambah garam pun boleh.
